  • ½ teaspoon vanilla extract
  • A pinch of salt
  • 1 tablespoon coconut oil or butter

Instructions

  1. Step 1: Sauté the Apples. Place a small skillet over medium heat and add the coconut oil or butter. Once melted, toss in the finely diced apples and a sprinkle of cinnamon. Sauté for about 4 to 5 minutes until the apples are tender and slightly caramelized. This step ensures the apple flavor is concentrated and the texture is soft.
  2. Step 2: Combine the Base. In a medium mixing bowl, combine the rolled oats, the remaining cinnamon, ginger, and a pinch of salt. Stir in the milk, maple syrup, and vanilla extract. Add the sautéed apples into the mixture and stir until everything is well incorporated. The mixture should be thick but moist.
  3. Step 3: Shape and Quick-Cook. Divide the mixture into four large greased ramekins or silicone muffin liners. For a 15-minute finish, you can microwave each cup on high for 2 to 3 minutes until set. Alternatively, if you have an air fryer, you can “bake” them at 350°F (175°C) for about 8 minutes until the tops are golden and firm.
  4. Step 4: Cool and Set. Allow the oatmeal cups to sit for 2 minutes before removing them from the molds. This resting time helps the oats absorb any remaining liquid, ensuring the cups hold their shape perfectly when handled.
